From the Weekend

We had a pretty quiet weekend (even though it was Valentines day and our 8 year anniversary) after a very extremely huge week.  Here are a few snippets from the weekend and a couple of pics from a few weekends ago.  How was your weekend? Was it nice and relaxing or hectic?

Happy New Year 2015!

I hope everyone had a wonderful Christmas and New Year.  We had a very busy time and now myself and the kids are sick with a cold, in a funny way I'm glad it's now when everything seems to have slowed down a bit, it's good to spend some time just relaxing after such a busy past few weeks.  2014 was a funny old year and I'm quite glad that it's done and a new fresh 2015 is just beginning, I love the feeling that a new year brings. 
So I'll be back soon and I hope that 2015 is a great year for all!

Meal Plan and Recipe

Here is our meal plan from the past week.  I even have a new fave recipe too!

Monday: Lasagne

Tuesday: Tuna Rissoles and Salad

Wednesday: Chicken Kiev, Chips and Salad

Thursday: Quiche and Pasta

Friday: Shepherd's Pie

Saturday: Leftovers

Sunday: Roast Pork and Veg

Recipe: Tuna Rissoles

1 can tuna
3 potatoes, mashed
1/2 onion, finely chopped
salt and pepper
2 eggs
fresh or panko bredcrumbs

  • Combine tuna, potatoes, onion, a squirt of dijonnaise and salt and pepper.
  • Make mix into rissole shapes, cover and put into the fridge for 20 minutes to cool and set.
  • Set up your crumbing station by putting some flour and breadcrumbs onto plates, mixing the egg, milk and salt and pepper together.
  • Take your rissoles out of the fridge and coat in flour, then egg mix and then breadcrumbs.
  • Fry rissoles in veg oil until golden.
And there you have it easy tuna rissoles and they are yummy, you could also substitute the onion and dijonnaise too.

Our Weekend

I hope you all had a great weekend, it was lovely weather here on Saturday so we took a little road trip and ended up in the lovely historic town of Richmond.  The morning started out a bit chilly and overcast but then the sun shone through and it turned out to be a beautiful day!

Richmond really is a beautiful place, there is so much to explore there.  We had a great day, I hope that whatever you did on the weekend that you had as much fun as we did.

Snippets From Our Garden

The last couple of days here have been really beautiful, lovely and sunny, slightly warm and just all round lovely, so we've been making the most of the sun while it lasts!
