Meal Plan and Recipe

Here is our meal plan from the past week.  I even have a new fave recipe too!

Monday: Lasagne

Tuesday: Tuna Rissoles and Salad

Wednesday: Chicken Kiev, Chips and Salad

Thursday: Quiche and Pasta

Friday: Shepherd's Pie

Saturday: Leftovers

Sunday: Roast Pork and Veg

Recipe: Tuna Rissoles

Ingredients:
1 can tuna
3 potatoes, mashed
1/2 onion, finely chopped
dijonnaise
salt and pepper
2 eggs
milk
flour
fresh or panko bredcrumbs

Method:
  • Combine tuna, potatoes, onion, a squirt of dijonnaise and salt and pepper.
  • Make mix into rissole shapes, cover and put into the fridge for 20 minutes to cool and set.
  • Set up your crumbing station by putting some flour and breadcrumbs onto plates, mixing the egg, milk and salt and pepper together.
  • Take your rissoles out of the fridge and coat in flour, then egg mix and then breadcrumbs.
  • Fry rissoles in veg oil until golden.
And there you have it easy tuna rissoles and they are yummy, you could also substitute the onion and dijonnaise too.

Our Weekend

I hope you all had a great weekend, it was lovely weather here on Saturday so we took a little road trip and ended up in the lovely historic town of Richmond.  The morning started out a bit chilly and overcast but then the sun shone through and it turned out to be a beautiful day!

Snippets From Our Garden

The last couple of days here have been really beautiful, lovely and sunny, slightly warm and just all round lovely, so we've been making the most of the sun while it lasts!

Our Garden

This is our veg patch this week, yesterday I harvested some garlic, onions and zucchini that just keeps coming and coming.  Anyone have any zucchini recipes? 




We've got lots of tomatoes coming up which we are very excited about, a few more garlics, silverbeet, beetroot, rocket, rhubarb, radish, pak choy, zucchini and lots of potatoes.  It's so lovely eating fresh veg from your own garden!

Our Weekend and a Fresh Start!

Hello, I'm back from my very long break, it was well needed and we managed to sort out a few issues and things that cropped up over the Christmas period and deal with a few things that had been lingering around all year.  I can feel already that 2014 is going to be a great fresh year and I am choosing to start my new year now, in February.

This year I will be blogging on a more regular basis and I have a plan of what I want to blog about and when.  We are unofficially starting homeschool kindergarten this year (today is the first day) and we are off to our first kindergym meet up and then lunch in the city with a visit to the library.

The topics that I want to blog about this year include meal planning, what we did on the weekends, homemaking/organising, craft, art, op/thrift shop finds, homeschool, our garden and anything else that comes up.  I hope that you will stay tuned and join us for these new adventures :)



To start with here is what we did on our weekend, on Saturday we stayed home all day as it was quite hot especially in the afternoon, we just hid inside with the fans on.  On Sunday we went to a local Chinese New Year festival and it was great they had free crafts for the kids, yummy Chinese food, entertainment, games and Master E got his photo taken with the Chinese dragon!  When we got home we were going to bake some sweet honey bread for Lammas, but it was just too hot to have the oven on so we may do some baking this afternoon.

I hope everyone has had a joyful Christmas and a happy New Year!  We certainly were busy over the Christmas period.

This year I have decided to do The 52 Project, which is a portrait of your children every week for a year, I think this will be a great way to motivate me to take more photo's and to look back on at the end of the year.
